 We did a short hike in Edwin Warner a few days ago and I don't remember
seeing any signs about no overnight parking there, but I don't know how safe
it is at night.

I'm not sure that there is any overnight (or long-term) parking on the Trace
other than the drive-in campgrounds.  I don't remember seeing any while
driving the length in 2005.  Then again, I don't remember not seeing any.  
Call the NPS at 800-305-9718.  The northern end is just outside Nashville,
so you might find some place or someone to host your car there.  There was a
nice park on the way into Nashville when I got off the Trace.  It had a
large lot but I'm not sure if overnight (or long-term) parking would be
permitted there.  [From my journal, it was the Edwin Warner Park and the
adjacent Percy Warner Park]

If you're planning on hiking the Trace, don't bother.  There's only 60+
miles of discontiguous hiking trails on the entire trace.  If however,
you're planning on bicycling, it'll be a great ride.  I recommend riding
north to south.  While a bit hillier in the north, it's mostly an easy and
flat ride but southbound is the generally downhill direction.  I hope to go
back to ride it myself sometime.

If you don't already have it, have the NPS service send you the strip map.  
Also print the bicycle campsite info from their web site.  The bike sites
are not documented on the strip map.

Thanks for giving me an excuse to pull out the map and reread my journal.
