At the Cracker Barrel where I work, we never refrigerate the ketchup.  We
use Heinz, and I looked on their website and found the following.

"Should ketchup be refrigerated?
Because it is a very acidic product, ketchup does not spoil easily. Once
opened, in order to maintain the product's quality more effectively, we do
suggest that ketchup (and any other processed food) be refrigerated after
opening because refrigeration retards spoilage."

Of course, the way some kids (and even adults) put wayyyy too much of it on
their plates, we go through at least a couple of cases a day of the stuff.
