[at-l] The Gathering

Well, I'm not going, but will be hosting a pre-Gathering gathering at my house on Wednesday night.? Longtime significant other Jon will be driving his car (close to 250,000 miles on it) and two hikers up to the Gathering.? They're all convening at my house for a pre-dinner hike, dinner, and a pretty early bedtime.? Plus, Sandy Friend is also overnighting as she's coming by to drop off her Nomad Lite tent that Jon is buying.



One of the folks coming is a vegan, so it's been interesting for me to work out a menu that would accomodate all.? Vegan chilli (lots of beans and tomatoes and diced sweet potatoes), homemade salsa & chips, cornbread made with soy milk and egg substitute (will someone please tell me is this will work?), peach crisp with the crumble topping made with canola oil margarine (again, is this going to work or will I have a greasy mess?), and in case the crisp is awful, red grapes, ripe pears, crisp apples, toasted walnuts and maple syrup or honey (for the non-vegans) to drizzle over the fruit if wanted.? 



Lest you feel too sorry for me about missing the Gathering again, I will be flying to Seattle on Oct. 16 and get to visit Mt. Rainier.?
