I freeze my sandwich the night before and then by the time I'm ready to eat, it is defrosted and ready.  I also carry packets of mayo to add.

Mayo & Chicken without refrigeration for a couple hours equals a high risk 
of food poisoning which would take a lot of the joy out of a hike.

great dinner then make sandwiches out of the left over chicken - sliced thin 
with a little mayo on whatever bread or bun you have. Fantastic for the hike
