Hello, Shelly-my-dear...

Loved your post on chicken salad a la JHPond Restaurant...all the possible
ways to add scrumptousness to simple diced chicken (which I dearly love)...

Hope you and hubby and son are doing well.  I'm quite ready for Spring,
myself..it's rainy-dreary-overcast here in Baltimore..and it's not fun. 

Was wonderful to see you at NOC..what a family!!!

Mayo & Chicken without refrigeration for a couple hours equals a high risk
of food poisoning which would take a lot of the joy out of a hike.

I freeze my sandwich the night before and then by the time I'm ready to eat,
it is defrosted and ready.  I also carry packets of mayo to add.

Hi Tenacious,

I also had the chicken salad at Jordan Pond House. It would be a real treat
to eat a cranberry chicken salad sandwich after hiking up Cadillac Mt.  

Acadia is one of our favorite places. I am working up the nerve to hike up
the Precipice Trail this summer. I heard someone died on that trail in 2012.

The sandwich should be followed by a popover, of course. We once hiked
around Eagle Lake and over the Bubbles to Jordan Pond House. A nice trip
with a great ending. Acadia is one of our favorite spots in the world also.
