Well, with a few exceptions, what you'd be catching in the
mountains is trout, and they don't need to be filleted --
usually the fillets aren't large enough to make it worthwhile.
You just gut them and cut off the parts that stick out.  (If
they're small, some people just fry them whole.)  This
should all be done well away from your campsite -- and well
away from flowing water -- and then you should wash your
hands thoroughly.  With reasonable care you shouldn't mess
up your clothes too much.

Also, cold-water fish like trout tend to be less smelly than
warm-water fish, unless you leave them someplace warm for a
while.
