Just a note on Shasta (I didn't see anyone mention it)

Yes, it is close to the trail, fairly hitchable I would guess.
However, you will not want to climb it, unless you can get some gear. You
will need crampons, and you will need an ice 
axe. Even the easiest route up should not be attempted without those items.

That being said, Shasta is a wonderful mountain, I think more enjoyable to
climb than Whitney, so if you can figure out 
how to ship yourself a pair of crampons, it would be worth (in my opinion)
taking the time to climb. I would 
recommend a very early morning start from the base (if you're doing it in
one day) 2AM or so, or doing a late start, 
camping halfway up, and peaking the next morning.
