Some thoughts...

 

Bear Vault and 10 days of food...   You won't strictly need to fit into the Bear vault until about the third night. Eat heartily until then!    But still, you may need to modify your preferred foods for this stretch. My basic food plan had a volume of 1 quart per day. I had to modify that for long stretches. E.g. tortillas instead of crackers, rice instead of noodles, or whatever applies to your preferences.

 

3000 calories...   The best metric is to simple monitor your weight and energy levels. Some folks can get by with 2500, other require 5000 or more. I needed about 3800 to maintain weight (55 year old male 5'8" 150 lb, which has little relevance to your situation!.)   3000 seems scant to me, but just pay attention to your body and adjust.

 

you mentioned cheese...   By the way, carrying cheese is easy. Wrap a big block of hard cheese in cheese cloth and then a ziplock and you're good to go. No oily mess, no mold.

 

One (unsolicited) caution. Don't be surprised if you lost some conditioning in just one week off the trail. The climbs might be steeper and the feet softer than when you stepped off the trail.
