Yes, that is totally doable.  But you run into the following problem:  Some
resupply places have very little in the way of lightweight, quality
pack-food... .and can sometimes be extremely expensive.  I've gone through
the pain and suffering of detailing exactly which resupply points have
inexpensive trail-worthy food available and which ones don't.  You can find

You may find that buying food in these places and sending it ahead to the
"food deserts" works for you.  Just something to think about.
