Mt. Shasta would be possible. Late spring/early summer are the favored times to climb Shasta but many do it later than that. You should be coming through here between July  and August. Let me know if you'll need some trail magic and I'll see you get to and from the trail to the Mountain, and to our house for a zero if you're interested. We've hosted six guys who have done Shasta during a thru hike.
