Unless you know the specific blog site of a hiker you want to follow, the two sites with the most journals are trailjournals.com and postholer.com.
Also, quit your job.

Subject: [pct-l] Living vicariously through the fortunate
I want to live vicariously through some PCT hiker this summer. Is there anybody
who is going to be posting regular blog, vlog, etc. entries? I can't do the PCT
until 2030, so I need something to tide me over until then.
