Abbi, If you don't have Yogi's guide get it.  It will answer many of your
questions and let you understand what towns will have the selection a
Vegetarian can probably successfully resupply from.  Write done (I use a
spreadsheet) each possible resupply and if they have a good grocery
selection.  Now all you have to do is fill in the gaps.  Once that is done
you have a couple of choices -  buy stuff to ship from home or do it as you
go on the way.  For me on the way takes too much town time so I have stuff
shipped from home.

Its getting late to make a lot of meals ala a dehydrator so you are mostly
going to have to find meals you can buy or just put together pretty easily.
I do a combination of throw things together in a ziplock and full on
dehydrator meals but I like good food and am a little more demanding of my
meals than the average thru hiker (no ramen for me).

One piece of advice - don't put together too many on any one thing - it is
easy to get sick of things quick on the trail.  I have a rule never to pack
more than of 5 of the same dinners for a thru hike.  I also don't send
myself the typical things I can easily get on the trail - mashed potatoes
or mac and cheese for example.  If I want these more often they are readily
available.

I like to ship myself dried veggies, Olive Oil, and things I can't find on
the trail like Nido  -- things I can add to meals I buy along the way.

Decentra's (2nd book I think) has a lot of meals you can just throw
together without a dehydrator.  Check out her web site and it will give you
some ideas for prep'ing meals this way.  It is a lot quicker and less work
than a dehydrator.
