Most people say you need about 4-5000 calories per day to maintain weight.  Easier to just check your weight along the trail or watch how your clothes fit to see if you are maintaining your weight.  Some people cheat on the daily calories (food weighs a lot and is sometimes a pain to carry) by calorie cramming whenever they get to town.
Nuts esp macadamia are calorie dense.  So is any high fat item (cheese for example).  Bottom line is you take whatever higher calorie foods you think you will want to eat.
