The line of demarcation for me is cooking.  I don't have the patience to cook food on the trail, other than boiling water, and I won't dirty my pot with food preparation because then I have to wash it.    So, anything that requires cooking beyond boiling water and dumping it into a throwaway pouch is out for me.  

I recently discovered the virtues of carrying fresh ham on winter hikes, when you have natural refrigeration.  Last month I carried two half-pounds of smoked ham, and swiss cheese, and merely opened up my food bag at the end of the day and started munching.  Nothing is better.
