I tried putting an MSR canister on my Jetboil. It leaked & would not light. YMMV but be warned.

<<  1) Assuming we just heat up water for rehydrating dinners, some
breakfast cereal, and the occasional hot drink, will one small canister last
for 3 people for the ~6 days we'll take for each segment (start to Red's;
Red's to Muir; Muir to exit)?  >>

I generally use a Jetboil for:  8 oz water per person to rehydrate dinner;
8-10 oz cup of tea at night; 10-12 oz for morning coffee; and occasional
oatmeal averaging about 4 oz per person per morning.  So about 32 oz or 1L
per person per day.  I have used a small JetBoil canister for 6 days for me
and my wife (12 person days or about 12 L)  There was still a small amount
to spare.  I normally count on 11-12 L per small canister, and I haven't
been disappointed.

So estimate how much water you will use each day and then do the math.  I'm
guessing for 18 person-days you will probably need a second small canister-
but you'll be close based on your described water use.

A couple tips - Unscrew and detach the canister each time when you are
finished heating water.  (Leaving it attached makes it susceptible to leaks
around the stove o-ring.  Not a problem when you are cooking, but if you
have a slow leak and it is attached overnight, you could deplete a
canister.)  Second - for the JMT make sure you get canisters with isubutane
and/or propane - not just butane.  If you get one that is mostly butane,
they will work fine down to the mid-30's, but not below.  Lastly, on really
cold nights (<25F) you may want to bring your canister into your tent.  I
actually throw mine to the bottom of my sleeping bag.  Keeping them a little
warm helps the fuel vaporize and start better.  If you try one in the
morning and it won't start, try it again in the evening or after you've
warmed it up.  You can usually get another boil out of an "empty" canister.

<<2) Can I count on purchasing a small jetboil canister at Red's Meadow and
Muir Trail Ranch?>>

They have them at Muir Ranch.  They "Promise" to carry them on their website
and I have yet to be disappointed by that promise.  I have re-supplied there
a number of times.  I have not tried at the Reds General Store.

<<  When I was my daughter's age and hiked these trails (very early 1970's),
we had never heard of permits or bear canisters or water filters, we cooked
over a fire, carried tube tents but always cowboy camped (but didn't call it
that), etc. etc.  Fun to think about.
Sunshine on the granite is still the same, however.>>

AMEN to all that!  In fact, I had a tube tent as well...  Thankfully I never
had to spend an entire night in one!!
